The Story Behind Meridian 78

Our South American Journey

Our South American Journey

We created this restaurant to share the foods and traditions that bring families together across Peru, Colombia, and Ecuador. Under the guidance of Chef Juan Esteban Maldonado, we prepare dishes that reflect the meals we grew up enjoying and the recipes that continue to connect generations. From fresh ceviche to lomo saltado and pollo a la brasa, every plate is served with care, respect for tradition, and a commitment to welcoming every guest who walks through our doors.
Fresh Ingredients, Shared Traditions

Fresh Ingredients, Shared Traditions

We believe that great meals begin with fresh ingredients, careful preparation, and respect for the traditions behind each recipe. Our kitchen focuses on seafood, meats, and classic South American dishes that have been enjoyed for generations in Peru, Colombia, and Ecuador. By combining quality ingredients with consistent cooking and friendly hospitality, we aim to create a dining experience that feels both familiar and memorable, giving our guests a place they can return to again and again.
